Carbonic Maceration

Carbonic maceration techniques are used traditionally in Beaujolais, France. We have been researching these methods with Nova Scotia red grapes for an early release wine that is in harmony with the lean characteristics of our cool climate red wines. Amplified fruit aromas are its signature with integrated acidity.
