The neck freezer freezes yeast sediment in the neck prior to disgorging (removing the sediment from the bottle).

Steel cages  age  our sparkling wine for up to 5 years in a process called “tirage”  which imparts the much sought after bready yeasty  aroma.

Wooden riddling racks from  France move yeast sediment into the bottle neck in a 21 day process of daily turning called “Riddling”.
