2016 Rosé Brut

This vintage marks our premiere release of Rose Brut. A uniquely fruit forward sparkling made from an early pick, September 30, of 100% Marechal Foch grown by our organic grower in Windsor on loam-clay soil. The growing season did not contribute the customary phenolics, anthocyanins and tannins that we usually have in our Sparkling Rose (100% Foch) releases. Gentle whole cluster pressing in a champagne bladder press extracted the minimal pigment that is showcased in this Rose Brut. A long ferment that continued into December included a spontaneous malolactic co-ferment that softened acidity. Careful dosage tasting trials showed that 5 grams per litre dosage was all that was required to balance while showcasing the acidity, significantly less than past vintages of Sparkling Rose at 12 g/l.
