Blend: 36% L’Acadie Blanc, 55% Marechal Foch, 7% Leon Millot (Cape Breton), 1% Luci Kuhlmann (Cape Breton), 1% Seyval

Blending goals for Vintage Cuvee Rose are always to strive to have harmony between fruit aromas and bottle aging autolytic characters. Marechal Foch from the Windsor area was picked September 30 at 18 Brix to capture the bright cherry, strawberry notes, and signature natural acidity. In 2017, a new organic grower in Baddeck, Cape Breton had their first harvest from young vines and Leon Millot and a small amount of Luci Kuhlmann added significant acid backbone and juiciness to the blend. All grapes were whole cluster pressed with light press yields. Aged in tank for 9 months and in bottle 15 months completes that harmony goal with juicy cherry and strawberry flavours and a hint of toasty notes. Hand disgorged to ensure utmost quality. Dry and finished with a higher dosage than 2016 Vintage Cuvee Rose but still to the customary brut style.

The mineral increases from out of the glacial till. As for Rosé fizz, in 2011 this blended dramatically early-picked marechal foch (40 per cent) with less antecedent specific to bubbly-grown l'acadie (60) grapes. Six years later there is an increased red fruitiness and while the acidity is raging, it bends the wine without breaking. So elastic and malleable, strawberry influenced and needed to work as a darling for Nova Scotia wine bars everywhere. And elsewhere. Drink 2020-2023. It has become a respected producer of small lot organic sparkling wines like this traditional method blend of Marechal Foch, L'Acadie Blanc and Chardonnay.Salmon pink with tiny persistent chains of bubbles, it delivers vibrant aromas of tangy red berries, peach stone and red apple peel, orange blossoms and honey with yeasty undertones. It's juicy and dry overall; fleshy red fruit and creamy apple flavours and just a kiss of sweetness (7gr/L dosage), which makes the fruit pop. Complex and pristine, elegant and persistent.Pair:oily seafood, roast turkey or chicken, complex or spicy Asian dishes, soft cheeses, creamy sauces.
